Tagatose Food Additives Sweetener is a functional sweetener. It is a naturally occurring monosaccharide, specifically a hexose. It is often found in dairy products, and is very similar in texture to sucrose (table sugar) and is 92% as sweet, but with only 38% of the calories.
Tagatose is a lactose that is hydrolyzed from lactose to obtain galactose (as lactose is a reducing disaccharide formed by the combination of galactose and glucose). Galactose is an isomer of glucose, also known as a hexose, which is then converted by isomerase to produce keto containing hexahexulose. Tagatose is a novel monosaccharide from natural sources, which is an epimer of fructose; Sweetness is 92% of the same amount of sucrose, making it a good low-energy food sweetener and filler.
